Why is there a Paper Towel In My Microgreens? (How to Store Microgreens)

Your microgreens order has just been delivered. Aren't they beautiful? Time to get them in the fridge so that they will not wilt. Make sure they have air flow. We don't want these babies to freeze! I know you can't wait to add them to dinner tomorrow.
Life has been life-ing! You haven't cooked; been eating on the run and haven't opened the fridge since they were delivered- when was that? Wednesday? Wait it's Thursday-over a week later!
Cringing inside you go to the fridge, open the door with your eyes closed. You open one eye to take a peek... Oh noooo--- They've melted! And what is the smell! Ugh!! You hang your head, take them to the garbage can that has to be taken out today, and toss them in.
Moisture and heat are microgreens' mortal enemies-- literally. That is why we place a paper towel in the bottom of the container. It helps to absorb that pesky condensation that happens and can build up in the fridge. To give your microgreens their best life, it is best to keep check on that paper towel. When it is almost, but not quite saturated, it is time to switch it out. That is if they last that long (He-he-he). Depending on the variety, some are more persnickety than others, they should last from 3 to 4 weeks.
